The Benedictine monks were the first to plant vines in Fosse-Sèche, at least 800 years ago.

Remaining property of the Church for several centuries, the seigniory of Fosse-Sèche belonged to the priory of Saint Pierre de Montreuil-Bellay and was part of the parish of Saint Hilaire de Rillé (today Vaudelnay) in the 15th century. Old tunnels, now collapsed, connected Fosse-Sèche to the priory. They extended over more or less 5 kilometers.

Several centuries of habitation have left testimonies from different eras on the estate. Today we find wine vats from the Middle Ages (among the oldest masonry vats in France), a castle wall from the 16th century, a communal oven, as well as a chapel and a dovecote from the same period.
